In this version, the pairing with Parmigiano Reggiano sauce makes it even more enveloping, perfect for starting an elegant dinner or as a complete vegetarian dish. <\/p>\n\n<p>The base is simple: zucchini, eggs, cream, and Parmesan cheese, for a soft and velvety texture. The contrast with the savory and creamy sauce makes it a refined yet comforting dish. Try it!  <\/p>\n<h3><em><br \/>Ingredients<\/em><\/h3>\n<p><strong>For the zucchini flan:<\/strong><\/p>\n<ul>\n<li>4 eggs<\/li>\n<li>250 ml of fresh liquid cream<\/li>\n<li>5 tablespoons of parmesan cheese<\/li>\n<li>3 tablespoons of flour<\/li>\n<li>500 g of courgettes or carrots<\/li>\n<li>1 onion<\/li>\n<li>extra virgin olive oil, salt and pepper to taste<\/li>\n<\/ul>\n<p><!--more--><\/p>\n<p><strong>For the parmesan sauce:<\/strong><\/p>\n<ul>\n<li>250 ml of liquid cream<\/li>\n<li>100 g of parmesan cheese<\/li>\n<li>1 goat&#8217;s milk cheese<\/li>\n<li>nutmeg to taste<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<h3><em>Procedure<\/em><\/h3>\n<p>Clean the vegetables, cut them into slices and saut\u00e9 them in a pan with a shallot or onion and a little extra virgin olive oil, salt and pepper.<br \/> Place the cream, eggs, flour, and grated Parmesan cheese in a food processor. Blend everything together.  Add the vegetables and blend some more.<\/p>\n<p>Place the mixture obtained into the appropriate buttered and floured <em>aluminum molds<\/em> . Bake in a bain-marie for about <strong>30 minutes at 180\u00b0C<\/strong> .<\/p>\n<p>For the sauce: melt the cream, parmesan and goat cheese in a bain-marie. Add a little grated nutmeg. Season with salt and pepper if necessary.<br \/> Serve with the mirror flan on the plate.<\/p>\n<hr>\n<p data-start=\"1983\" data-end=\"2131\"><strong>For an alternative version<\/strong> , you can replace the Parmesan sauce with a light saut\u00e9 of clams: an excellent idea for a fish-based dinner.<\/p>\n<p data-start=\"2133\" data-end=\"2147\">Enjoy your
