Veal cheek is slowly braised in red wine with aromatic herbs and accompanied by a soft cream of oven-roasted pumpkin. <\/p>\n\n<h3 class=\"wp-block-heading\"><em>Ingredients<\/em> (for 6 people)<\/h3>\n\n<h4 class=\"wp-block-heading\">For the braised cheek:<\/h4>\n\n<ul class=\"wp-block-list\">\n<li>600 g of whole veal cheek<\/li>\n\n\n\n<li>1 liter of red wine<\/li>\n\n\n\n<li>2 carrots<\/li>\n\n\n\n<li>1 onion<\/li>\n\n\n\n<li>1 stalk of celery<\/li>\n\n\n\n<li>2\u20133 juniper berries<\/li>\n\n\n\n<li>1 sprig of thyme<\/li>\n\n\n\n<li>1 bay leaf<\/li>\n\n\n\n<li>1 clove<\/li>\n\n\n\n<li>Flour to taste<\/li>\n\n\n\n<li>Extra virgin olive oil<\/li>\n\n\n\n<li>Salt to taste<\/li>\n\n\n\n<li>Vegetable broth to taste<\/li>\n\n\n\n<li>1 tablespoon cornstarch<\/li>\n<\/ul>\n\n<h4 class=\"wp-block-heading\">For the pumpkin cream:<\/h4>\n\n<ul class=\"wp-block-list\">\n<li>1 whole pumpkin (about 1 kg)<\/li>\n\n\n\n<li>300 g of coarse salt<\/li>\n\n\n\n<li>Vegetable broth to taste<\/li>\n\n\n\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n\n<p><\/p>\n\n<h3 class=\"wp-block-heading\"><em>Procedure<\/em> :<\/h3>\n\n<h4 class=\"wp-block-heading\">Marinade:<\/h4>\n\n<p>In a large bowl, combine the veal cheek, red wine, roughly chopped vegetables (carrot, onion, celery), and spices. Cover with plastic wrap and marinate in the refrigerator for at least 12 hours. <\/p>\n\n<h4 class=\"wp-block-heading\">Cooking the cheek:<\/h4>\n\n<p>Remove the meat from the marinade and pat it dry with paper towels. Lightly flour it and brown it in a pan with a drizzle of extra virgin olive oil until golden brown. Season with salt.  <\/p>\n\n<p>Meanwhile, strain the marinade. In a casserole dish, saut\u00e9 the marinated vegetables with a little oil, then add the browned cheek. Add the strained wine and, if necessary, a little water. Cook over low heat for about 2 hours, or until the meat is tender.   <\/p>\n\n<h4 class=\"wp-block-heading\">Red wine sauce:<\/h4>\n\n<p>Strain the cooking liquid and reduce it over the heat until it reaches a thick, glossy consistency. To thicken the sauce, add a tablespoon of cornstarch dissolved in a little cold water, bring to a boil, and strain again. <\/p>\n\n<h4 class=\"wp-block-heading\">Pumpkin cream:<\/h4>\n\n<p>Cut the pumpkin in half, remove the seeds, and place it cut-side up on a baking sheet sprinkled with coarse salt. Cover with foil and bake in a preheated oven at 170\u00b0C (340\u00b0F) for 60 minutes. <\/p>\n\n<p>Once cooked, scoop out the pulp with a spoon and blend it with a ladle of vegetable broth until smooth. Season with salt and pepper. <\/p>\n\n<h4 class=\"wp-block-heading\">Plating:<\/h4>\n\n<p>Place a generous spoonful of piping hot pumpkin cream in the center of the plate. Arrange the braised cheek, sliced or diced, on top.
