The pumpkin is baked to concentrate the flavors, while the burrata, chestnuts, and crispy pancetta complete the dish with surprising textures and contrasts. <\/p>\n<h3 data-start=\"584\" data-end=\"615\"><em>Ingredients (for 4 people):<\/em><\/h3>\n<ul data-start=\"617\" data-end=\"843\">\n<li data-start=\"617\" data-end=\"641\">\n<p data-start=\"619\" data-end=\"641\">1 pumpkin (about 1 kg)<\/p>\n<\/li>\n<li data-start=\"617\" data-end=\"641\">\n<p data-start=\"619\" data-end=\"641\">4 slices of bacon<\/p>\n<\/li>\n<li data-start=\"666\" data-end=\"679\">\n<p data-start=\"668\" data-end=\"679\">1 burrata<\/p>\n<\/li>\n<li data-start=\"680\" data-end=\"715\">\n<p data-start=\"682\" data-end=\"715\">50 g of steamed chestnuts<\/p>\n<\/li>\n<li data-start=\"716\" data-end=\"741\">\n<p data-start=\"718\" data-end=\"741\">25 g of pumpkin seeds<\/p>\n<\/li>\n<li data-start=\"742\" data-end=\"775\">\n<p data-start=\"744\" data-end=\"775\">10 g pumpkin seed oil<\/p>\n<\/li>\n<li data-start=\"776\" data-end=\"800\">\n<p data-start=\"778\" data-end=\"800\">300 g of coarse salt<\/p>\n<\/li>\n<li data-start=\"801\" data-end=\"824\">\n<p data-start=\"803\" data-end=\"824\">Vegetable broth to taste<\/p>\n<\/li>\n<li data-start=\"825\" data-end=\"843\">\n<p data-start=\"827\" data-end=\"843\">Salt and pepper to taste<\/p>\n<\/li>\n<\/ul>\n<hr data-start=\"845\" data-end=\"848\">\n<h3 data-start=\"850\" data-end=\"866\"><em>Procedure:<\/em><\/h3>\n<h4 data-start=\"868\" data-end=\"890\">For the cream soup:<\/h4>\n<p data-start=\"891\" data-end=\"1121\">Cut the pumpkin in half, remove the seeds, and cover each half with aluminum foil. Place the pumpkin on a baking sheet covered with coarse salt and bake in a preheated oven at <strong data-start=\"1062\" data-end=\"1092\">170\u00b0C (340\u00b0F) for about 60 minutes<\/strong> , until completely soft. <\/p>\n<p data-start=\"1123\" data-end=\"1303\">Once cooked, scoop out the pulp with a spoon and blend it with hot vegetable broth until creamy. Season with salt and pepper. Keep warm.  <\/p>\n<h4 data-start=\"1305\" data-end=\"1336\">For the crispy bacon:<\/h4>\n<p data-start=\"1337\" data-end=\"1627\">Place the pancetta slices between two sheets of paper towels and microwave for <strong data-start=\"1428\" data-end=\"1457\">90 seconds on high<\/strong> , until crispy. Alternatively, bake in a conventional oven at 180\u00b0C for about 10 minutes, between two sheets of parchment paper and a baking sheet on top to keep them flat. <\/p>\n<h4 data-start=\"1337\" data-end=\"1627\">Plating:<\/h4>\n<p data-start=\"1653\" data-end=\"1933\">Pour the piping hot soup into a plate. Place <strong data-start=\"1718\" data-end=\"1745\">a portion of burrata<\/strong> in the center, add the <strong data-start=\"1761\" data-end=\"1785\">chopped chestnuts<\/strong> , <strong data-start=\"1789\" data-end=\"1814\">toasted pumpkin seeds<\/strong> , and the <strong data-start=\"1820\" data-end=\"1842\">crispy bacon<\/strong> , crumbled or whole.
