The choice of amberjack\u2014a fish with firm, delicate flesh\u2014allows for a meat-free alternative, perfect for those who follow a balanced lifestyle without sacrificing pleasure. And with the lightened a\u00efoli and burrata emulsion, the balance between softness and freshness is guaranteed.  <\/p>\n\n<h3 class=\"wp-block-heading\"><strong><em>Ingredients:<\/em><\/strong><\/h3>\n\n<h4 class=\"wp-block-heading\"><strong>For 10 sandwiches:<\/strong><\/h4>\n\n<ul class=\"wp-block-list\">\n<li>10 milk rolls<\/li>\n\n\n\n<li>50 g of melted butter<\/li>\n\n\n\n<li>10 radishes<\/li>\n<\/ul>\n\n<h4 class=\"wp-block-heading\"><strong>For the burrata emulsion:<\/strong><\/h4>\n\n<ul class=\"wp-block-list\">\n<li>400 g of burrata<\/li>\n\n\n\n<li>50 g of extra virgin olive oil<\/li>\n\n\n\n<li>Salt to taste<\/li>\n<\/ul>\n\n<h4 class=\"wp-block-heading\"><strong>For the amberjack burger:<\/strong><\/h4>\n\n<ul class=\"wp-block-list\">\n<li>500 g of amberjack fillets (already cleaned)<\/li>\n\n\n\n<li>120 g of egg white<\/li>\n\n\n\n<li>Chopped fresh marjoram<\/li>\n\n\n\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n\n<h4 class=\"wp-block-heading\"><strong>For the light aioli:<\/strong><\/h4>\n\n<ul class=\"wp-block-list\">\n<li>50 g garlic paste (see page 149 of the book)<\/li>\n\n\n\n<li>2 eggs<\/li>\n\n\n\n<li>400 g of seed oil<\/li>\n\n\n\n<li>1 teaspoon mustard<\/li>\n\n\n\n<li>1 tablespoon white wine vinegar<\/li>\n\n\n\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\"><strong><em>Procedure<\/em> :<\/strong><\/h3>\n\n<h4 class=\"wp-block-heading\">For the burrata emulsion:<\/h4>\n\n<p>Blend the burrata with extra virgin olive oil and a pinch of salt using an immersion blender until smooth and velvety. Transfer it to a baby bottle for easy serving. <\/p>\n\n<h4 class=\"wp-block-heading\"><strong>For the amberjack burger:<\/strong><\/h4>\n\n<p>Finely slice the amberjack into a tartare. In a bowl, combine the egg white, chopped marjoram, salt, and pepper. Shape the burgers using a pastry cutter. Let them rest in the refrigerator for an hour, covered with plastic wrap. Then, bake them in the oven at 200\u00b0C for a few minutes, just long enough for the egg white to set.    <\/p>\n\n<h4 class=\"wp-block-heading\"><strong>For the light aioli:<\/strong><\/h4>\n\n<p>Place all the ingredients in an immersion blender. Blend until you obtain a smooth, stiff sauce, similar to mayonnaise, but lighter and more aromatic. <\/p>\n\n<h4 class=\"wp-block-heading\"><strong>For the radishes and the composition:<\/strong><\/h4>\n\n<p>Slice the radishes very thinly with a mandolin and place them in ice water to crisp them. Cut the milk rolls in half, brush them with melted butter, and grill them for a few minutes.
