Watercolor Risotto World Summit
October 2012, Milan prepares to welcome leading culinary professionals from Italy and around the world for the Acquerello Risotto World Summit , an event celebrating one of the symbols of Italian gastronomy: risotto . Tradition, creativity, and international influences meet in an occasion that brings together diverse culinary languages and contemporary visions.
The initiative is conceived by Itchefs-GVCI , in collaboration with the CHIC (Charming Italian Chef) association, and included in the official calendar of Milano Golosa , an event curated by Davide Paolini (the Gastronaut). The Final Challenge will be held on Friday, October 19 , in a suggestive location: Villa Torretta , a historic 17th-century residence immersed in the greenery of Milan’s Parco Nord.
The undisputed star will be Acquerello rice , the event’s main sponsor, alongside partners such as Ferrarelle, Grana Padano and Terre del Sole .
An international challenge
Milan will welcome the winning chefs of the international competitions held throughout the year at:
- Hong Kong (Eyck Zimmer)
- New York (Olivia Bonomi Todorov)
- Moscow (Bruno Marino)
They will compete with seven Italian professionals belonging to the CHIC association:
Fabio Baldassarre, Andrea Gabin, Luca Collami, Sergio Vineis, Athos Migliari, Carmine Calò and Paolo Trippini.
As Rosario Scarpato , the creator of the event, stated, “The aim is to highlight a dish and a preparation technique that are very Italian, but which are now part of the heritage of global gastronomy.”
I’m also on the jury
It will be an honor for me to be part of one of the two juries scheduled for the final:
- a technique
- one composed of representatives of the blogosphere and the world of gastronomic communication
Presiding over both is Davide Paolini , critic and journalist, supported by professionals such as:
- Francesca D’Orazio (writer and food consultant)
- Tano Simonato (Tano Pass Me the Oil – Milan)
- Claudio Sacco (Gourmet Traveler – Highest Class)
- Alex Guzzi (Corriere della Sera journalist, sommelier)
- Fabiano Guatteri (journalist and food critic)
The evening’s program
5:45 PM – Public debate
Topic: “Italian Risotto: Tradition or Innovation in the World?”
An open discussion between chefs, journalists, experts, and food culture enthusiasts.
6:15 PM – The Challenge
Ten Italian and international chefs will compete in the ultimate risotto. Two juries will decide the winners.
6:30 PM – Risotto around the world
International connections with restaurants participating in the Risotto World Summit circuit.
Official presentation of the Italian Cuisine and Wines World Summit , scheduled in Hong Kong from 1 to 10 November .
8:45 PM – The Great Risotto
A choral dinner hosted by Marco Sacco (Piccolo Lago, Verbania – 2 Michelin Stars), president of CHIC. A convivial moment dedicated to risotto on a grand scale: a blend of technical mastery and Italian hospitality.
